Pumpkin Muffins

If you've spent some time on Pintrest, I am sure you have seen this recipe for pumpkin muffins. It only calls for one box of yellow cake mix and one can of pumpkin. I was in a mini baking mood and decided to try it since I can't get enough pumpkin this time of year. I couldn't find Libby's Pumpkin so I had to use the organic stuff. I am all about natural and organic but when it comes to baking I don't like substitute.

The muffins were good but not as amazing as I wanted them to be (they didn't come close to my Mom's pumpkin bread). They were much better after sprinkling some cinnamon on them. I would imagine if you use Libby's, add cinnamon or nutmeg and sprinkle pieces of pecans or walnuts on them before baking then you might have something to talk about. It is an easy recipe to have around if you are short for time but don't count on this going into the family recipe book.

There is a whole section on this recipe website dedicated to Libby's. I haven't tried any but if you're looking for something pumpkin it looks like the place to go!
